Gillian's Cucumber And Mint Raw Soup Weight Loss Recipe

Ingredients:
5 cucumbers
2 celery sticks (optional)
1 ripe avocado
Handful of mint leaves
1 garlic clove or ½ a shallot
Squeeze of lemon juice
Chopped fresh parsley

Method:
Juice 3 of the cucumbers and blend the other 2, place into a large bowl and add the juice of the celery sticks (optional).
Blend the mint leaves and garlic (or shallot) together with a squeeze of fresh lemon, add to the cucumber and celery and place in the fridge to chill.
Serve when chilled and garnish with the chopped parsley.
