Houmous
Ingredients:
410g can of chickpeas, drained and rinsed
1 garlic clove, peeled and crushed
3 tbsp of tahini
Juice of half a lemon
2 tbsp chopped coriander (optional)
1 tbsp olive oil
Method:
1. Place all the ingredients in a food processor and blend until smooth.
2. Transfer to a bowl, cover and chill until required.
This lasts a couple of days covered in the fridge.
